Chef Eunji Lee's patisserie, Lyse, has captivated dessert enthusiasts since its opening in 2022. Known for its daytime shop and signature pastries, Lyse recently introduced "The Journey," a ten-course tasting menu available on Thursday evenings. This culinary experience showcases Lee's innovative approach to dessert, moving beyond the traditional pastry case to create elaborate and expansive dishes.
The Journey begins with a savory introduction, a pea tart, followed by a steamed egg with seaweed and caviar. The menu then progresses through a series of courses, including a Spring Herb dish featuring a variety of textures and flavors. As the meal unfolds, guests experience a "sweetness gradient," transitioning from savory elements to increasingly dessert-focused creations.
The menu includes a layered yuja sorbet with citrus and meringue, followed by a bread and butter course. The experience also features a mid-meal break with a palate-cleansing fruit vinegar and a bonbon. The second act of the Journey presents larger platings with richer flavors, including a deconstructed version of Lee's signature brown-rice mousse cake. The meal concludes with a series of desserts, culminating in a chocolate petit four.
The ten-course tasting menu is priced at $140 per person. Despite the venue's simple setting, the talent and creativity of Chef Lee shine through. The menu, presented after the meal, is a beautifully illustrated watercolor, serving as a lasting memento of the experience.
