Mitchell was a prominent figure on the Texas A&M "Wrecking Crew" defense during the 1990s. During his four-year collegiate career from 1993 to 1996, he amassed 34 sacks, placing him fourth all-time in program history. Mitchell concluded his professional playing days with the Jacksonville Jaguars and the Houston Texans. Over his NFL career, he accumulated 408 tackles and 19.5 sacks in 94 games.

Twelve years after retiring from professional football, Mitchell was honored for his contributions to the sport with induction into the Texas A&M Athletics Hall of Fame.
